Sixty Vines, at 5050 Town Center Circle in Boca Raton, received 15 violations during a health inspection on Oct. 21, according to the Florida Department of Business and Professional Regulation. The restaurant was not ordered to close, and a follow-up visit on Oct. 22 logged no violations.
Inspectors cited several high-priority problems. Rigatoni sauce was not cooled quickly enough, and inspectors found cold-holding failures in a long list of items at the front counter and reach-in units, with several products measured between 47 and 70 degrees Fahrenheit. Raw chicken was stored over bread in a freezer, and raw tuna and ground beef were kept above or beside ready-to-eat food. Two cracked shell eggs were found in a walk-in cooler.
Other citations involved an employee who handled food without washing hands after touching a soiled rag, a handwash sink used for a spoon, and a sink without soap. Inspectors also noted a sanitizer bucket that was below the required strength. Most issues were corrected on site, and the operator moved food and remade the sanitizer during the visit. Several items were placed under stop-sale warnings.
