A Fresco y Más supermarket in Kendall failed a state food safety inspection on October 8, according to the Florida Department of Agriculture and Consumer Services. The store is at 15050 Sunset Dr., near Kendale Lakes. The Miami Herald first reported the findings.
Inspectors flagged food held at unsafe temperatures. Six cases of Lifeway Kefir arrived at 46 degrees, above the 41-degree limit for cold holding, and inspectors issued stop-sale orders on all 192 ounces. A whole salmon, four packages of salmon fillets and four packages of tilapia also were outside safe limits, and they were placed under stop-sale orders as well.
In the deli, an opened package of imported serrano ham was still on display six days after its September 25 date mark, which called for it to be sold or discarded by October 2. Inspectors ordered it thrown away. Packaged sausage and frozen beef liver were found thawing at room temperature, and a box of raw oxtails sat in standing water in a sink. Staff cooked the sausage and moved the liver and oxtails into proper refrigeration.
Inspectors also saw an employee wash dirty pots and pans with soap and then dip them into sanitizer without the required rinse. A leaking drain pipe was noted at a produce sink. According to the Herald, management could not correctly answer questions about foodborne illness symptoms and reporting duties. Inspectors cited weak managerial oversight.
The store fixed several problems during the visit but still failed. The inspection did not find that any customers became ill.
