Katsuya, the Japanese restaurant known for its Hollywood nightlife crowd, will open at Thesis Hotel Miami Coral Gables in the first half of 2027. Chef Fabio Trabocchi is also bringing a new Mediterranean restaurant to the hotel, his return to Coral Gables after closing Fiola.
The openings are part of a partnership between SBE and Nolan Reynolds International, the developer of Thesis Hotel and the surrounding Paseo de la Riviera project across from the University of Miami. SBE now runs the hotel’s food, beverage and events operations, including Mamey, the Collab and Ivy Rooftop.
SBE founder Sam Nazarian, who lives in Coral Gables with his family, said the project is personal. Katsuya was created in 2006 with sushi chef Katsuya Uechi, who died June 24, 2026, at age 67. The Coral Gables location is expected to serve the sushi, robata and cocktails the brand is known for, though menu and design details have not been announced.
Trabocchi opened Fiola in Coral Gables in 2018 and operated it through 2025. His new restaurant will have its own name, design and menu, which are expected to be revealed before it opens.
SBE will also expand the hotel’s events program, which covers weddings, corporate gatherings and university functions. The property has 245 guest rooms and about 6,500 square feet of meeting space. The restaurant location is 1350 S. Dixie Hwy.
