A popular French macaron bakery is back at the West Palm Beach GreenMarket this season after taking a yearlong break to focus on wholesale orders, WPTV reported.

Jonathan Aviv, owner and master baker of Macaroner, started the business during the COVID-19 pandemic. He said perfecting the recipe took thousands of failed attempts. The bakery now offers traditional, vegan and gluten-free macarons in 24 flavors, including lemon basil, salted caramel and a lavender honey made with Mānuka honey from New Zealand, which Aviv said he is especially proud of.

Aviv said he typically makes between 1,000 and 2,000 macarons for each market day so he does not run out of flavors. Children tend to favor birthday cake, Fruity Tooty, strawberry hibiscus and Oreo cookie, he said.

Aviv said some customers travel from out of state to buy the macarons, which he said are hard to find where they live. WPTV also explained the difference between a macaroon and a macaron in its report.
