State inspectors temporarily closed China Spring III, a Chinese restaurant at 8100 Wiles Road in Coral Springs, after an October 8 inspection turned up rodent droppings, dead cockroaches and 15 violations.

According to the inspection report, droppings were found on the kitchen floor beneath preparation tables, food containers and reach-in coolers. Dead roaches were documented in two areas of the restaurant, and inspectors said rodent activity reached food preparation and storage spaces.

Inspectors also reported food handling problems. One employee was seen handling dirty dishes before touching clean ones, and workers were observed handling food without washing their hands. Grease, food debris, dirt, slime and dust were found on nonfood-contact surfaces throughout the restaurant. Inspectors also found that every employee’s required food safety training had expired.

The restaurant cannot reopen until it passes a reinspection confirming all violations have been fixed. The report does not say when that visit will take place.
